Banana Mini Muffins

Adapted from the Mayflower Hotel's famous banana bread, these mini muffins are a delicious bite-size treat!


  • ¾ C Sugar
  • 6 Tbsp butter
  • 3 eggs
  • 1/3 cup + 1 tbsp bread flour
  • 3 Tbsp cake flour
  • ¼ tsp baking soda
  • 1/5 tsp salt
  • 1/3 C sour cream
  • 3 tbsp walnuts
  • 1 tsp vanilla
  • 2 ripe bananas


  1. Preheat the oven to 350°F. Spray mini-muffin tin with cooking spray.
  1. Cream butter with sugar, add bananas. Slowly beat in eggs one at a time.  Then add in bread flour, cake flour, baking soda, and salt.  Mix well.
  1. Add sour cream, walnut pieces, and vanilla extract. Mix well and pour into prepared tin.
  1. Bake 12-15 minutes or until starting to brown around edges and toothpick inserted in center comes out clean.
